Poppyseed Chicken

About the Recipe

This is a family recipe that my husband grew up with and now our boys are growing up with it. It's so delicious, comforting and creamy. It hits the taste buds just right every time!

Ingredients

  • 2 chicken breasts, cooked and shredded

  • 1 C sour cream

  • 1 (14.5oz can) cream of chicken soup

  • salt and pepper to taste

  • full sleeve of ritz crackers

  • 6 tbsp butter, melted

  • 2 tbsp poppyseeds

Preparation

Step 1

Cook two chicken breasts and shred. Season with salt and pepper. If using a rotisserie chicken, shred about two cups worth of chicken and add to a large bowl. (If cooking your chicken, throw them in the crock pot the day before or just boil them in some salted water or broth for about an hour).


Step 2

In a large bowl mix chicken with sour cream and condensed cream of chicken soup. Season with salt and pepper.


Step 3

Spread out mixture in the bottom of a greased 8x8 baking dish - (other baking dishes are fine too).


Step 4

Take a full sleeve of crackers, crush into crumbs and mix in 6 tablespoons of melted butter. Stir in the 2 tablespoons of poppyseeds. Sprinkle mixture evenly over chicken. Bake at 350 degrees F for 30-45 minutes.


*I love to serve this up with broccoli, roasted sweet potatoes and rice!
